Don’t Throw Out Those Thanksgiving Leftovers!

After a day or so of nibbling on leftover turkey after Thanksgiving you may be tempted to turkeysaladjust throw it out.  The same can be said for those day old mashed potatoes.  But as much as I hate eating the same leftovers day after day I hate wasting food just as much.  So this year I am vowing to try these turkey day leftover recipes in an attempt to make a lighter fare leftover meal that the whole family will enjoy.

Leftover Turkey:  Cape Cod Turkey Salad (can also use your leftover celery from stuffing and cranberries from sauce)

Ingredients:

*3 cup diced cooked turkey

*1 cup diced celery

*1/2 cup dried cranberries

*1/2 chopped walnuts

*1 cup mayonnaise

*1/2 cup sour cream

*salt and pepper

Directions:

Mix the turkey, celery, cranberries, and walnuts together in a bowl.  To make the dressing, whisk the mayo, sour cream, salt, and pepper together in a bowl.  Pour over turkey mixture and toss to coat evenly.  Refrigerate for at least an hour and serve cold.
